This is a wonderful salad to have on hand throughout the week! It is versatile and goes with everything! YUM!

1 lb. canned black beans

1 tsp. olive oil

1-2 tsp. ground cumin

2 minced garlic

2 cups thawed frozen corn

2 cups seeded tomatoes (I use canned diced)

1 cup sweet onion

1 cup chopped red pepper

1 cup chopped green pepper

Toss together with sauce!

Sauce:

1/2 cup lime juice

1 Tbl. chili powder (start with less and add for desired heat)

3 Tbl. olive oil

2 tsp salt

1 1/2 tsp ground cumin

1 jalapeno (chopped and seeded)

2 tsp honey

3 minced garlic cloves

1/4 cup finely chopped cilantro
