My mom-in-law, Margaret, was raised in the Mennonite faith. I found this treasure amongst her recipe books after her death last year.

I wanted to share a simple recipe for the holidays in memory of her and her gift of hospitality. She loved to share their home and their table with friends and family.

I hope you enjoy the recipe and glimpses of days gone by.

Scalloped Sweet Potatoes and Apples

4 medium-size sweet potatoes

3 large tart apples

1 tsp. salt

1/4 cup butter

1/2 cup maple syrup or honey

Cook the sweet potatoes and cut in slices 1/2 inch thick.

Slice apples in rings 1/2 inch thick. Do not pare.

Saute` apple rings in 2 TBL butter until light brown.

Arrange alternate layers of sweet potatoes and apples in a greased casserole.

Make a syrup of the remaining butter and maple syrup.

Pour over the ingredients and bake at 375 degrees for 40 minutes. Serves 6.
